Egg Standards of Australia (ESA)

ESA is a voluntary quality assurance program that has been developed through extensive consultation with the industry to provide a robust and practical standard that meets the needs and requirements of regulators and retailers within Australia and works to deliver consistency across the industry.

ESA provides a workable framework for producers to demonstrate compliance across egg primary production and processing.  ESA is based on the principles of HACCP (Hazard Analysis Critical Control Point) and covers the following aspects of egg production:

  • Biosecurity
  • Food Safety
  • Hen Welfare
  • Egg Quality
  • Work Health & Safety and
  • Environmental Management

Certification to the Standard will be granted to egg producers that meet the relevant requirements as set out in the ESA Standard and ESA Scheme Rules.

Understanding the ESA Certification

ESA is divided into two separate programs covering the process from rearing and laying through to grading and packing of eggs for sale.  The standards are voluntary and there are 3 levels of certification for Rearing & Laying open to all egg producers/farmers:

This standard focuses on industry practices relating to day old chicks or started pullets to the farm, up to the point of removal of started pullets, spent hens and eggs for human consumption from the farm. This component is applicable to the following types of egg production systems: Cage, Barn and Free Range.

  • Level 1- Basic: This entry level of participation is recommended for egg farmers new to the egg industry and to quality assurance systems – level 1 is only available for the Rearing & Laying Standard.
  • Level 2-Core: This intermediate level is recommended for egg farmers with a more advanced compliance and record keeping system which would meet the regulatory requirements.
  • Level 3- Comprehensive: This level is highly advanced and requires participation from egg farmers who have a fully developed compliance and record keeping system to meet the regulatory and major retail customer requirements.

This standard focuses on the general requirements for the collection, grading, washing, packing and delivery of shell eggs, as well as the hygienic manufacture, storage, packaging and distribution of egg pulp and egg products for sale or supply for human consumption only. 

There are 2 levels of certification for Grading & Packing open to all egg producers:

  • Level 2-Core: This intermediate level is recommended for egg farmers with a more advanced compliance and record keeping system which would meet the Regulator requirements.
  • Level 3- Comprehensive: This level is highly advanced and requires participation from egg farmers who have a fully developed compliance and record keeping system to meet the regulatory and major retail customer requirements.
